Wooki Kim, PhD

Dr. Wooki Kim is currently serving as an Associate Professor in the Department of Food and Nutrition at Yonsei University, Seoul, Korea. He obtained his Ph.D. in Nutrition Immunology from the Intercollegiate Faculty of Nutrition at Texas A&M University, USA, from 2004 to 2008, under the co-advisement of Dr. Robert Chapkin and Dr. David McMurray. His doctoral research focused on investigating the immunomodulatory effects of dietary fish oil and docosahexaenoic acid (DHA) on T-cell signaling. Prior to his doctoral studies, Dr. Kim completed his Bachelor of Science degree in Biotechnology at Yonsei University, Seoul, Korea, from 1995 to 2002.
Dr. Kim has accumulated extensive professional experience in academia and research. He has held various academic positions, including Professor and Associate Professor in the Departments of Food Science and Biotechnology at Kyung Hee University, Korea, from 2012 to 2024. He also served as a Postdoctoral Fellow at Emory University, USA, from 2010 to 2012, under the co-advisement of Dr. Charles Parkos and Dr. Timothy Denning. Additionally, he completed another Postdoctoral Fellowship at Texas A&M University, USA, from 2008 to 2009, under the advisement of Dr. Robert Chapkin.
Dr. Kim’s research interests lie at the intersection of nutrition, immunology, and food science, with a focus on investigating the health-promoting properties of various food compounds and their impact on inflammatory responses, oxidative stress, and metabolic disorders. He has contributed significantly to scientific literature with numerous research papers published in reputable journals. Some of his notable publications include studies on the anti-inflammatory effects of dietary compounds such as trehalose, ginsenosides, and turmeric, as well as investigations into the modulation of mitochondrial respiration and cytokine production in immune cells.
In recognition of his scholarly achievements, Dr. Kim has received several prestigious awards and honors throughout his career. These include the Kyung Hee Fellowship in Education (2022), the Academic Advance Award from the Korean Society for Food Science and Technology (2017), and the Young Scientist Award from the American Society for Investigative Pathology (2011), among others. He is an active member of various professional organizations, including the Korean Society of Food Science and Technology and the American Society for Nutrition. Dr. Kim also serves in editorial roles for several scientific journals, demonstrating his commitment to advancing research in his field and contributing to the scientific community through scholarly dissemination and leadership.

Key Note Speech: “Far Infrared Light Used in Storage Spaces to Enlarge Shelf Life of Tomatoes”
The study investigated the effects of monochromatic far-red light (FRL) on tomatoes stored at 10 °C, comparing them to those kept in darkness. The results demonstrated that FRL exposure enhanced wax biosynthesis, resulting in a thicker protective layer that improved moisture retention and fruit firmness. While tomatoes exposed to FRL exhibited better quality indicators—such as lower browning, higher titratable acidity, and increased vitamin C levels—they also experienced more pronounced discoloration due to a greater reduction in lycopene content. Additionally, FRL-treated tomatoes showed reduced yeast and mold colonization, indicating improved microbial resistance. Overall, these findings suggest that far-red light can significantly enhance the quality, shelf life, and nutritional value of stored tomatoes, providing important benefits for both consumers and the food industry by reducing waste and financial loss.

Professor Dr. Fook Yee Chye is a distinguished Malaysian academic and researcher, currently serving as the Head of the Food Security Research Laboratory at Universiti Malaysia Sabah. With a strong background in Food Science and Nutrition, he obtained his BSc (Hons) and PhD from the National University of Malaysia. His research expertise encompasses microbial food safety, natural antimicrobials and antioxidants, food fermentation, prebiotics, and the study of edible wild fungi.
Dr. Chye has significantly contributed to the academic community through his teaching and research. He imparts knowledge in courses such as Food Microbiology, Food Safety and Quality Control, and Food Innovation at the undergraduate level, while also guiding postgraduate students in principles of food safety and quality, food safety management, and rapid methods in food microbiology. His current research projects include exploring the anti-hyperlipidemic and cardio-protective properties of stingless bee honey, post-harvest quality assessment of high-value aquaculture species, and the development of fermented food products with probiotics from Sabah seaweeds.
Recognized for his outstanding contributions, Dr. Chye has received numerous honors and awards, including the World Inventor Award in 2014 and multiple gold and silver medals in international invention exhibitions. His prolific publication record includes influential journal articles on topics such as the health benefits of garlic polysaccharides, the antioxidant properties of stingless bee honey, and the nutritional value of oyster mushrooms.
Dr. Chye’s work not only advances the scientific understanding of food safety and nutrition but also has practical implications for improving food security and public health. His dedication to research and education continues to inspire students and colleagues alike, making him a prominent figure in his field.

Assoc. Prof. Nelly Mayulu is a lecturer, Medical Doctor and Food & Clinical Nutrition Scientist with experience in Food Sciences, Nutrition, and Public Health Medicine. She completed her PHD in Medical Science at Hasanuddin University, Indonesia. She is a working as a reviewer in International Peer- reviewed, Refereed Journals, and Open Access Journal. Also, she is a scientific advisor and a webinar speaker in Global Obesity Awareness for Longevity & Svelte. He was the Head of Department of Food & Clinical Nutrition from 1995 – 2007 and from 2014 – 2018. She was the Head of Nursing Program from January 2007 – 2012 and a lecturer Midwifery from 1995 – 2007 and from 2014 – 2018. Her expertise areas are Food Sciences, Clinical Nutrition, Obesity and Non-communicable diseases and Epidemiology. Also, she has taken part in number of global conferences and events.

Plenary Speech Title: “Unveiling the Power of Nigella sativa: From Ancient Remedy to Modern Health Elixir”
Mohammed Dalli Ph.D, is an Assistant Professor at the Higher Institute of Nursing Professions and Health Techniques, Oujda, Morocco. In addition to his primary academic role, he is an associate member of the Laboratory of Bioresources, Biotechnology, and Health, research team of Cell Biology and Applied Pharmacology in Health Sciences, University Mohammed the First, Faculty of Medicine and Pharmacy, Oujda, Morocco. Prof. Dalli is a specialized scientist in the domain of physiology and ethnopharmacology.
Prof. Dalli earned his Ph.D. from the University of Mohammed the First, faculty of sciences Oujda, Morocco, where he concentrated his research on determining the pharmacological potential of bioactive substances obtained from diverse aromatic and medicinal plants.
His academic and research journey has been marked by significant contributions to these fields, underscoring his commitment to advancing scientific knowledge and its applications in health sciences. During several years of research in the field Prof. Dalli and due to the strong collaborations specially with Prof. Bonglee Kim and his team where they were able to secure several patents and the publication of numerous research papers in prestigious scientific journals.
Prof. Dalli´s work has centered on the identification, isolation, and characterization of bioactive compounds from aromatic and medicinal plants. Through meticulous research, Prof. Dalli and his team were able elucidated the pharmacological properties and chemical composition of different medicinal and aromatic plants, paving the way for their potential use in the discovery and development of new drugs. This research has not only expanded the scientific community’s understanding of these bioactive substances but has also highlighted their potential therapeutic applications.
Beyond his research contributions, Prof. Dalli serves as an associate editor for the Journal of Cannabis Research (BMC, Springer Nature). His role extends to providing critical reviews for various prestigious journals related to his research areas, ensuring the integrity and advancement of scientific knowledge.
In addition to his research efforts, Prof. Dalli actively participates in scientific conferences and symposiums. These events provide valuable opportunities to network with fellow scientists and share knowledge and ideas. He envisions a future where safe and efficient remedies for a wide range of diseases will be derived from the rich resources found in medicinal and aromatic plants.

Dr. Rony Abdi Syahputra, is a dedicated faculty member at the Faculty of Pharmacy, Universitas Sumatera Utara. His research journey has been marked by notable experiences and contributions to the field of pharmacy and pathology. Between February 2024 and May 2024, he served as a Research Fellow at the Department of Pathology and the Korean Medicine-Based Drug Repositioning Cancer Research Center, College of Korean Medicine, Kyung Hee University, South Korea. Previously, from September 2021 to February 2022, he held a research fellowship at the Department of Life Sciences, University of Siena, Italy.
Rony possesses extensive technical expertise in both wet-lab and dry-lab environments. His wet-lab skills include in vivo studies, ELISA, immunohistochemistry, H&E staining, and the extraction and purification of natural compounds. In dry-lab settings, he excels in protein/DNA/chemical drug interactions, structure analysis, molecular docking, primer designing, and network pharmacology. Additionally, he is proficient with various tools and software such as SigmaPlot, GraphPad Prism, BioRender, EndNote, Mendeley, and PowerPoint.
Throughout his career, Rony has secured multiple grants for his research, focusing predominantly on the isolation and characterization of bioactive compounds from Vernonia amygdalina (African leaf) and their cardioprotective and anticancer properties. His projects have been supported by prestigious sources like DRTPM and Talenta USU, with total funding exceeding 1.3 billion Rupiah. Notable projects include investigating the cardioprotective activity of African leaf extracts in various animal models and exploring the anticancer potential of different natural compounds.
Rony’s research has also led to numerous publications in high-impact journals. His recent works include studies on the antihypertensive potential of flavonoids, the wound healing efficacy of Pepromia pellucida, and the cardioprotective effects of Vernonia amygdalina ethanol extract. His articles are published in reputable journals such as Phytotherapy Research, Journal of Agriculture and Food Research, Molecules, and Frontiers in Pharmacology.

Plenary Speech Title : "Discovery of bioactive natural products"
Dr. Ki Hyun Kim is an esteemed Professor in the School of Pharmacy at Sungkyunkwan University, where he leads the Natural Product Research Laboratory. He received his B.S. (2005), M.S. (2007), and Ph.D. (2011) degrees from Sungkyunkwan University, Republic of Korea. His academic journey includes significant postdoctoral research positions at prominent institutions. From 2011 to 2012, he served as a Postdoctoral Researcher at Sungkyunkwan University and concurrently as a Part-time Lecturer. In 2012, Dr. Kim furthered his research at Harvard University’s Department of Chemistry & Chemical Biology, followed by a stint at Harvard Medical School’s Department of Biological Chemistry & Molecular Pharmacology from 2012 to 2014. He joined the faculty of Sungkyunkwan University as an Assistant Professor in March 2014, was promoted to Associate Professor in 2018, and became a Full Professor in 2023.
Dr. Ki Hyun Kim is an expert in natural product chemistry and pharmacognosy, making significant contributions to the field. His research focuses on discovering bioactive natural products from diverse natural resources, particularly in four main groups: a) Korean medicinal plants, b) Korean wild mushrooms, c) termite-associated bacteria, and d) marine organisms. He specializes in the isolation, structural characterization, and biological activity evaluation of natural compounds. Dr. Kim’s research interests also include metabolomics, natural product medicine/cosmetic development, novel biomarkers, and eco-friendly/nanobio-natural product materials. He serves on the editorial boards of several SCI(E) journals, including the Journal of Ginseng Research, Archives of Pharmacal Research, Plants, Separations, and Bioorganic Chemistry. Dr. Kim is dedicated to training MSc and PhD students, as well as young researchers, for the development of new drugs, botanical dietary supplements, and functional cosmetics from natural sources.
In recognition of his scholarly achievements, Dr. Kim has received several prestigious awards and honors throughout his career. These include the Minister of Science and ICT Award for Knowledge Sharing (2023), the Next Generation Leading Pharmacist Award from The Pharmaceutical Society of Korea (2022), SKKU Young Fellow from Sungkyunkwan University (2021), the Young Pharmacognosist Award from The Korean Pharmacognosy Society (2014), the Namgang Academic Award from the same society (2011), and the Promising Future Pharmacist Award from The Pharmaceutical Society of Korea (2010). Dr. Kim also serves as an expert in the Central Drug Review Committee for the Ministry of Food and Drug Safety and is a member of the Young Korean Academy of Science and Technology, contributing to the scientific community through scholarly distribution and leadership.
